Dans la région de Caserte, la culture du kaki possède plus d’un siècle d’histoire. Dans ces zones, on trouve encore de nombreux vergers traditionnels composés de variétés historiques telles que Kaki Vaniglia, « Ukakis » et les soi disant « Lignasante ». Au cours des dernières décennies, la variété « Rojo Brillante » s’est également largement diffusée. Cette variété, à chair ferme et astringente au moment de la récolte, est aujourd’hui très connue sur le plan commercial. En el territorio de Grisì, en la provincia de Palermo, la olivicultura representa un elemento identitario sólido, vinculado a variedades como “Nocellara del Belìce”, “Biancolilla”, “Cerasuola” y “Giarraffa”, además de un patrimonio paisajístico de gran valor. In the Grisì area, in the province of Palermo, olive growing represents a strong element of local identity, closely linked to cultivars such as Nocellara del Belìce, Biancolilla, Cerasuola, and Giarraffa, as well as to a landscape heritage of significant value. However, many traditional groves show structural limitations: excessively tall trunks, accumulation of woody mass, production shifted toward the outer canopy, and cycles of severe topping every two or three years that generate recurring imbalances. The intervention proposed by Agronomist Vito Vitelli is based on a clear technical principle: interrupting the cycle of excessive wood growth, drastic cutting, and renewed vigor through soft and progressive pruning. In these territories, numerous traditional orchards are still present, composed of historic varieties such as Kaki Vaniglia , “Ukakis,” and the so-called “Lignasante.” In recent decades, the variety “Rojo Brillante” has also become widespread.
